Really the difference is in the amount of time needed before watching the episode. Sure, buffering happens every time with watching online, but from when you click the play button to when you can start watching is shorter than from when you start the torrent to when you can start watching.
If you want to quickly take a peek at something to see if you like it, online watching is more convenient. If you want to watch something in high quality and have it for later, you torrent it.

I agree, streaming is better for previewing, and just getting into it.
I, however, believe that if you know what you want (and have spare time), it's good to torrent it.
Of course there's a time and place for both. I like burning anime on discs and watching it on TV too.
