Uh, Miles, none of those ideas is too easy to use, and some even won't work at all. Allow me to explain:
1- Dwarves are incredibly afraid of water. They will simply refuse to work on any square that has more than 1/7 of it, no matter how well they swim. Normally, dwarves can only walk through squares with up to 3/7, but every level or so of swimming skill will add 1/7 to that limit. Even legendary swimmers will drown eventually, though, if there are no open air tiles directly above them.
2- Wells do subtract small amounts of water when used, but considering that a dwarve usually drinks 1/7 water every two days, and only when there's no booze whatsoever, and that aquifers refill about 1/7 water per second, that one is a no-no. Building a well would be good anyways, though, since it makes the dwarves happy.
3- Screw pumps are the only one of your ideas that might work. Let's see. For a screw pump to work continuosly, you would need a power source, most likely a windmill. With some luck, you can power three adjacent pumps with a single medium-wind mill. For each pump, you would need three logs: one for the pipe, one for the corkscrew and one for the blocks. They would have to be built adjacent to each other, since without rocks you woldn't be able to build gear assemblies. Each windmill also requires three logs of wood and a wooden axle built underneath it, and since you would need about six pumps to keep clear a 2x2 space (enough to build a stairway without obstructing the pump system), you would need at least 3*6 + 4*2 + 2 = 28 logs of wood, a pretty hefty sum for a small fort. And you would need to do a lot of careful digging , since windmills must be placed of a channel with a vertical axle and be exposed to the surface to work properly. So yeah, you could do it, but it would be much easier to just use a controlled cave-in.
In other words, going through miles and miles of water is hyper-ultra difficult, do you geti-t?

so I can't power things long-distance with windmills without stone/metal, that's good to know.
also, I was suggesting just make a 5x5-7x7 space nothing but downward stairs into the aquifer from above, and then destroy the outer stairs, and then build walls in their place, creating a 4x4-6x6 space, with 7/7 water that isn't directly connected to an aquifer, so I could drain it over more time.
But if pumps are that simple to do, I might do that.

Dwarves cant build in anything above 1/7 water afaik, so to build the walls you basically have to constantly pump, but once you've done it you're sweet. Also the ponds behind the pumps dont overflow if you make them at least 3x3ish behind each pump due to the water draining back into the aquifer. also: THE ♥♥♥♥ ELVES DIDN'T BRING ANY WOOD.

Next time, kill em all and eat their back animals. Then melt down their weapons for useful mate- OH WAIT WOODEN SWORDS. I wish you could melt down wooden crap. It would make things so much easier.
EDIT: Just spent half an hour dividing 6 custom professsions that grouped my dwarves into unskilled, but plentiful groups, ensuring speed by numbers, into about 12 or 13 more specific ones that will be slower now, but will speed up with time. Is this a good idea?

Depends what your custom professions were, and weather you had oddjobs mendwarves in the previous arrangement. And also, Re: Kill 'em all: I seized all their goods and used my drawbridge to fling them around a little. One fell into a pool and drowned, the others scampered off. Relations with the elves are not so good ( )

well all of my work on my fort has been irrelevant, because one of my rooms just sort of started flooding. One of the walls was at an odd angle and some body of water, either a pond, or just an aquifer... well the water finally got through the weird angle... it was water that I couldn't see until it entered the room... Long store short, my fort flooded and 3/4 of my dwarfs drowned. I abandoned the fort and made a new one. I now have 7 champion wrestlers, and a pile of cut gems... I went to start making glass so I could eventually make soap... and I found out my map has no sand. I did however apparently get a mountain that seems to be made of at least 9 different kinds of gems, jet and bauxite... and I actually have an anvil this time! now I just gotta keep my dwarfs fed, and get my wrestlers to put their clothes back on. So I guess my new question is, "how do I make my champion wrestlers put clothes and/or armor back on?" right now they're all wearing pants, vests, 1 glove, and 2 shoes, and occasionally a hood.

Getting them to wear armor is quite easy. Just go into (v)iew mode, enter the (p)reference cathegory and (s)oldiering subcathegory. Change their armor to cloth and then back to your desired armor type, and they'll go grab it. Getting them to use real clothing, though, requires you to assign them a bedroom of their own and a cabinet, where they'll store their spare clothing. And I was bored today, so I made one of those fortress novelisations. This 'un is about that fortress with a single dwarf standed among a horde of skeletal carp. Unless we can create a lot of wealth, and fast, we will not even be able to trade for food and clothing.” “And you suggest …?” “We have but one chance. If you would look at this map…” He unfolded an old, partially burnt piece of parchment. “There is quite a number of ore-rich lands north of our kingdom. If we could create mining colonies there, we might just be able to mine enough metal to keep the kingdom going for the next decade. By then, food production should already have stabilized, and our civilization shall be on the rise again.” “Very well, then. We shall send our soldiers to claim those lands posthaste.” “Uh, about that, we might have a problem.” “…?” “The army has been… how can I explain this? Well, decimated. We would have to send civilians to the wilderness, and that might spread our forces even thinner. Year One, part One – Death awaits at the end
Taken from the logbook of “Big Cheese” Flamepaints, found several years later.
Day one. Well, this is it. After so many years of wanting to go outside the tunnels, to know the outside world, Lady Luck has blessed me with her grace. I’ve been chosen as expedition leader of an adventurer group known as The Boat of Defense. Apparently the king himself (!) has chosen us to colonize a far-away land, known only as RazorRubs. Pretty lousy choice of name, if you ask me. But anyways. Oh, the joy of seeing the surface for the first time! It’s all so beautiful! Even though they should have told me that the sunlight makes you vomit all over. Oh well, I’ll get used to it. Now, I’ve got a wagon to catch! - Day two. We’ve been travelling for quite some time now. The expedition consists of six dwarves aside from me, and they all seem pretty capable, if not too talkative. So far, I’ve only made friends with Kol, our planter. Seems a nice fellow, always talking of how he would make huge farms with pristine crops once we got to our destination. The surroundings are also very quiet and peaceful, though I would like a change of scenery, these woods never seem to end!

Day eight. We’re almost there! According to the maps, we are already inside the future colony’s region, we just need to head a few miles north to reach the exact spot. I’m so excited about this! … We are pretty much there. The terrain is… still lush and beautiful, but something strikes me as slightly unsettling. Here and there I catch sight of a dead, burnt tree, and twice I’ve seen crows feeding on some horribly mangled dead animals. Kol told me not to worry, but yet I (The writing here is uneven and jittery, as if written by someone in great agitation.) Oh Armok. OH DEAR ARMOK. We-we had barely reached the place, when they appeared. Dozens of them. Like fish, but walking over land. And they had no flesh, just bones. Our mason was the first one to die. One of them just bit him in the neck, and it wouldn’t let go, and the following minute it was just a mass of blood and crushed bone… We tried to turn back, but they killed the horses that pulled the wagon… I just ran and ran, and I could hear the screams of the others behind me. When I stopped running, Kol was beside me. Before I could even say anything, another of those… things appeared, but Kol threw himself over it and shouted for me to run. And so I did. I’ve been hiding under this dead tree trunk since then. Tomorrow I’ll go see if I can find the others. Someone else MUST be alive. They must. So that's it. Was it too bad?

I made a nice little fort with a hand-cranked screwpump that floods the sealable trade depot. mwahaha. Another lever pours off the water to a nearby chasm, with vertical grates on the far wall to prevent my newly acquired loot from flowing through.
After three years of this, and largely ignoring the huge number of goblin invasions, I found myself down to 4 dwarves. Because so much death and destruction was raining down on the place, new inhabitants were scared away. Every time I saw the message "No new dwarves" I was cursing the heavens.
With only 4 dwarves you can't get anything done. I couldn't even keep up with moving all my loot out of the trade depot. I eventually sealed all the external floodgates (I don't use doors for outdoor access) and just left everyone on "Hauling" mode, no other tasks. Took them 3 hours realtime to clean everything up.
Think I'll work on my coliseum next. I have two dozen cages with goblins in them, and another dozen with various wild animals. Line a glass-walled room with cages linked to levers and you have a rumble on your hands!... Though making glass is a pain in the neck. Maybe I'll just throw them down a 5 story pit. Just high enough to break legs, not high enough to kill...

I hate merchants. I have a Human one stuck in my fort. They went to the trade depot, but I shut up my Floodgate entrance for a seige. It ended, I opened up, and they sat there. Three years on, they are still there, and I even deleted the Depot.
With no depot, two elves and their animals were sat at my border, waiting. They had access out. When, suddenly, one elf decides to go berzerk, and the other 3 creatures (elf included) go stark(ers). Sure, I got free loot, but wtf?
