I like the giant cave map, but the hotel map looks interesting.
EDIT: Oh ♥♥♥♥ I was digging up, trying to get a ray of sunlight into my cave, when I hit a pool sitting above ground. ;_;

Ocean maps are incredibly annoying to build on for those of us who aren't *ahem* and use the actual minecraft client.
Especially THOUSAND TILE LONG ocean maps.
Hotel would just get in the way.
Massive caves face a similar problem to ocean map, but less so. Personally, I'd like a hybrid map between some things.
3 height-level chunks: the lowest is a massive, somewhat flattened cave. Second area up (still underground) is the more divided caves you've got. Top area is a roughly flat area, probably without liquids to limit flooding. Maybe just throw adminblock between layers and have controlled access-ways up and down. But that's a bit complicated, I suppose.

The hotel map is a neat idea, but it's hard to "decorate" with the limited tile types in MC, and making unique spaces requires much larger areas.
My concern with the current multicave is a lack of surface height. A good chunk of the current normal server building is aboveground, and while 32 (if that's what it is) is fine for the majority of circumstances, it's not always enough.

Are you sure that is not just because of difficulty? In the current server, most of what is underground is pure rock, with a few caves interspersed here and there. The multilevel cave, a whole lot of the building is below ground because it is far easier to build something with air down there. If worse comes to absolute worse, I'll just brute force it and split the map in four. One quarter big ocean, one quarter big cave, one quarter ruins, and one quarter ruins with cave underneath. Very messy, since it would be split crudely by adminblocks, but it would get the requested maptypes all in one. I would much prefer the ocean with islands, so I'll work on that.
