Stop Crafts from Auto-Scuttling?
Setting a craft to a different AI mode every frame doesn't work, they still scuttle.

Well what's causing it to scuttle - is it from overrotation or staying in one spot or what?

Check to see if it is about to rotate too far, then flip it instead so that it appears to very nearly rotate but does not ever go 180 degrees. If you get what I mean.

How fast it is rotating might be a factor too, though I'm not 100% positive on that.

It didn't seem to be from my testing with the plane.
If possible, Cavecricket, try to use another class and just animate the doors. Keep in mind that literally all A* classes can have Inventory, it's just that craft are the only ones capable of delivering without gibbing.

You could have it go lifetime=1 and then spawn another one at the same angle, perhaps stopping it gibbing.

You can use Actor:DropAllInventory if I remember correctly. The main problem will be making the doors pick things up, not spit them out.

Through some tests, I found that once you do DropAllInventory on a door craft, it will actually open it's doors and keep them open, allowing you to pick more things up (after a short time delay). But I don't think you can actually close the doors after that.
