And all my vassals love me. Yet they still like rebelling all the time.

Do what I do.

Assassinate the head of the rebellion and their entire family, so their title gets passed on. Then give it to someone who's traits match yours.

I kinda boxed myself in by doing that, though. Since I'm an empire, I put all my sons as the kings of the kingdoms that I have subjugated. If they rebel, I can't kill them, because that'd give me the kinslayer trait and no one wants that. So I figure'd the best solution. Eliminate that kings three biggest supporters after crushing the rebellion, then replace those supporters with your supporters. It pretty much makes the king a puppet regime.

Bit late for that really

So I declared independence from Scotland. Hired some mercs, won the war, declared myself the king of Ireland. Started reuniting Ireland.
Half my realm puts up a rebellion. I barely fight it off while Scotland snatches a few counties. Another rebellion. Scotland snatches one more county.
Currently I am the king of Ireland. Ireland is a bit divided between rulers, though. I'm scared of Scotland now.

Is there a crusade going on?

If so, wait for the scots to go on it, then invade them while their army is overseas. Or, go on the crusade yourself and take as much as possible to win the crusade. You'll get vast amounts of ground.

Well yeah, that'd probably work, but I'll concentrate on conquering the independent counties first. Then I'll go kick some scottish ass.
