Not quite as complicated. The water molecules take up the energy as they change state. So melting or freezing water is always exactly 0 degrees and boiling or condensing water is always exactly 100 degrees. This assumes you're not messing with supercritical fluids or other exceptional circumstances.

So, water vapor condensing on a cold glass is always, at one point, 100 degrees? That makes double negatives of sense to me.

I'm not sure if it would work that way, unless you had quite a lot of water vapor condensing at once, but theoretically yes.

Actually, cold glass condensation is in extremely small quantities. The same goes for vaporisation. Only a few molecules are at the critical temperature at a time, and the energy is taken from or deposited to the surrounding area in correspondingly small amounts.

And, I do agree with your point on increasing mass, it's just a really small effect yet the expansion in size is far bigger so excuse my unjustified correction. No, that's a special environment alright. Anything that changes the boiling/melting point of water, or any bit of matter, will change the temperature at which that matter sits while it changes state.

It'll never occur at the set normal value, because you can never have perfect conditions.

Then each molecule will at some point pass through the critical point at that pressure. It's not that hard, and I'd assumed it was common sense, but whatever.

The different pressure causes a different required pressure actually. But then you'll have some molecules changing state at lower or higher temperatures due to pressure fluctuations.
