Also, according to the backstory behind the tutorial mission, dummies rebelled against whoever controlled them before, and they were probably used for testing before they rebelled, so it would make sense for them to die when they lose their heads, so that they would accurately model more squishy targets.

A ladar system attached to a low orbit station. It's far too expensive to produce that many easily destroyed machines each with their own individual means of area awareness. I'd imagine the head to be actually one giant reciever of ladar information streamed to them from the station or satellite in orbit. This could effectively provide each and every dummy with an accurate amount of information on their physical surroundings.
In any case: who cares? Don't you have an imagination? If not, supplement it by watching copious amounts of science fiction.

If it's one way plastic, then it should be shoot-offable. When we get to choose icons for the buy menu, we can make it a complete head with the mask shoot-offable.
