i keep looking around (i used the search this time), but I cannot find an explanation of where the offsets for each variable start (that probably means im expected to know what one is. I feel stupid )

Well, after the SpriteOffset is defined (which is in reference to the bottom right corner of the sprite), everything is an offset of the SpriteOffset. The easiest way to do offsets is to define your SpriteOffset from the center of your sprite, it makes everything less confusing.
