Is there any way to change a units icon in the buy menu so its not the units head?

No, from what I know it is always the head.
Or body if It's an Acrab.
But I'm not entirely sure about crabs.

It's most likely hardcoded in each actor class as to which body part it will show. You could always be inventive and make some other bit the head, but use clever offsets if needed.
